Korean Tteokbokki & Japanese Kiri Mochi
Rice cakes are popular throughout Asia and are known for their distinctive, pleasantly chewy texture:
- Korean Tteokbokki & Tteokguk: The cylindrical rice cake sticks (Banh Gao) from brands such as Matamun, Bibigo and O’Food are at the heart of this popular Korean street food. Whether prepared traditionally in a spicy Gochujang sauce, with Jjajang black bean paste, Sweet & Spicy sauce or as convenient instant cups from Yopokki, Tteokbokki is quick and easy to prepare. For traditional Korean soups, thinly sliced Tteokguk rice cakes are an excellent choice.
- Japanese Kiri Mochi: These firm, individually wrapped rice cake blocks (e.g. from Sato or Daishin) are traditionally made from pounded glutinous rice. Grilling, frying or heating them in soup gives them a deliciously crisp exterior while the inside becomes wonderfully soft and chewy.
How to Prepare Tteokbokki Rice Cakes – Our Tips
To give your Tteokbokki rice cakes the perfect chewy texture and help them absorb the sauce, soak chilled or dried rice cake sticks in lukewarm water for around 10 to 15 minutes before cooking. Then add them directly to the simmering sauce, traditionally made with Korean Gochujang paste, a little stock and a touch of sweetness. Simmer over medium heat for approximately 5 to 8 minutes until the rice cakes are soft and the sauce has thickened.

FAQ – Asian Rice
Which rice is best for Thai curries?
Jasmine rice, also known as fragrant rice, is the traditional
choice for Thai curries. Its slightly sticky texture absorbs
creamy, spicy coconut milk-based sauces beautifully while still
maintaining its structure on the plate.
What is the best way to store uncooked
rice?
Uncooked rice should be stored in a cool, dry place away from
direct light. Once the package has been opened, we recommend
transferring the rice to an airtight storage jar or container to
preserve its aroma and protect it from pantry pests.
Are Tteokbokki and Mochi gluten-free?
Rice cakes made exclusively from glutinous rice flour, water and
salt, such as many Matamun Tteokguk rice cakes or Kiri Mochi
products, are naturally gluten-free. However, for ready meals with
sauces or instant cups, always check the ingredients list, as
included soy sauces
or other wheat-based ingredients may contain gluten.
