How Do I Properly Use Dried Mushrooms?
Dried Asian mushrooms are very easy to use once you know how to prepare them correctly:

Soaking: Place the dried mushrooms in a bowl
and cover them completely with warm water (not boiling!).
• Soaking time: approx. 20–30 minutes for fine varieties such as Mu Err, up to 1 hour for Shiitake.
• They should fully absorb the water and become soft again. -
Draining & Cleaning: Once softened, remove
them from the water, cut off the tough stems (especially for
Shiitake), and rinse briefly.
• Tip: It’s best to keep the soaking water. It is very flavourful and excellent as a base for soups or sauces (filter beforehand). - Further Preparation: The mushrooms can now be used like fresh ones, e.g. for cooking, frying, in soups, stir-fried dishes or with rice.
- Quantity: When soaked, they increase significantly in volume, meaning you can expect about 3–4× the weight after swelling.
- Storage: Dried mushrooms will keep for several months to years in an airtight container stored in a cool, dry place. This preserves their aroma, texture and nutrients.

an intense umami flavour and pleasant texture. Other Asian dishes
such as soups, rice bowls or stir-fried dishes also develop special

Do I always need to soak dried mushrooms before use, or
can I add them dried?
In most cases, dried mushrooms should be soaked before use. Soaking
them in warm water (around 20–60 minutes, depending on the variety)
softens them, enhances their aroma and brings out their full
texture. Only when using them in soups or stews that cook for a
longer time can you add them directly dried, as they will naturally
rehydrate during cooking.
Why shouldn’t the soaking water from Shiitake mushrooms
be discarded?
During soaking, Shiitake mushrooms release many of their aromas and
minerals into the water. This liquid is a natural flavour enhancer
and ideal as a base for soups, sauces or for cooking rice.
Important: Filter the soaking water through a fine sieve or kitchen
paper to remove small residues.
